The 16-year-old had begun performing her rendition of Rain On My Parade from the musical Funny Girl when Simon stopped her and asked if she could perform a different song.
"I can't listen to that," he told her. "Can I hear something else a little less smiley and just a better song."
Simon's fellow panelists were angered that he had stopped Jodi's audition, with Amanda Holden telling him: "I was really enjoying that!"
Speaking to This Morning, Jodi said she was "devastated" when Simon interrupted her, adding: "You have that one chance to prove yourself and it was just taken from me, and I thought: "What am I going to do now?"
Despite Simon's request for a different song, Jodi stood her ground and said she wanted to continue with her original choice.
"I was determined to sing the same song," she told Phillip and Holly. "Musical theatre is really my passion and it's what I want to do and I want to prove to Simon that this is me and this is what I'm going to do."
Jodi's determination paid off as Simon admitted he had made a mistake in stopping her audition, prompting huge cheers from the BGT audience.
"That was just unbelievable, for him to actually put his hand up and say I'm sorry was just incredible.
"And I think it was a good thing, because he made me sing much more powerfully, with much more strength and I just thought that was a good thing to do - although it was kind of mean."
