Kevin McBride was killed in the incident at Dicey Riley's in the Market Street area of the Co Tyrone town, shortly before 2am on Sunday.
Police are treating the 37-year-old's death as an accident.
His parents arrived on the scene as paramedics tried to save him.
Speaking to UTV on Monday, Kevin's mother Patricia McBride said she cannot believe what has happened to the "much-loved" man.
"They were working on him in the back of the ambulance but I didn't know until yesterday that his heart had stopped so I didn't see him until I got to the hospital and I didn't get to see him until I knew he was about to die," she said.
"He only went out once a week," she said.
"You love your wee ones. When something like this happens you hear so much about them and I never knew how much-loved my son Kevin was. I can't believe it."
Kevin lived with his parents at their home on the Ballycolman Estate and his mother said he was 'very good to them'.
Sinn Féin Councillor Brian McMahon said his Kevin was a neighbour of his.
He said he was a "well-liked young fellow, hard-working and well-thought of in the estate".
"Strabane is in shock at the loss of Kevin," he added.
The McBride family also lost Kevin's brother eight years ago in tragic circumstances.
The owners of Dicey Reily's have expressed their condolence to the family.
Police have asked anyone who witnessed the incident over the weekend, or who has more information, to get in touch with them.
