The new deal will see the number eight continue with the side until 2016.
New Zealander Williams has made a huge impact since his arrival from Aironi last year.
He was named Pro12 player of the year last season as well as the Irish players' player.
The 29-year-old's decision to stay will come as a huge boost for Mark Anscombe's side after it emerged Ruan Pienaar is set for a move to French side Toulon.
Williams said the decision to continue on was an easy one as his family had settled well and he "wouldn't want to play anywhere else".
