The result gives the Belfast side a boost as they prepare to meet the Cardiff Devils on Sunday.
At the Hull Arena, neither side managed to open their goal account during the first period.
The Giants did net twice in quick succession in the second though, through Craig Peacock and Andrew Fournier.
But a shot from Hull's Jereme Tendler fired past netminder Stephen Murphy to narrow the gap.
It was Robbie Sandrock who replied to keep the Giants two goals to the good by the end of the second period.
And in the third, Jason Silverthorn - who had an earlier effort waved off - finally scored for the Stingrays to make sure the clash stayed interesting.
The dying minutes of the game saw Hull pull their netminder as they went all out to try to at least tie the score, but the Giants held off the offensive to take the win.
