The 4 - 2 success over their Yorkshire rivals on Saturday had increased Paul Adey's side yawning gap at the top to 17 points. And on Sunday they had to work hard, finding themselves 3 - 2 down.
David Phillips fired the Giants ahead just 34 seconds in.
Jeff Legue replied for the visitors before Peacock restored the lead at 2 - 1 with two minutes left in period one.
Sheffield were in control afterwards though and Dustin Kohn made it two apiece before Chad Langlais scored as Steelers coach Doug Christiansen - against his former employers - went into the lead.
One minute and 34 seconds into the final period though Peacock made it 3 - 3 and then Saurette snatched the winner with 13 minutes and 11 seconds on the clock.
The Giants are next in action on Wednesday when they defend a seemingly impregnable 7 - 1 lead from the first leg of their cup semi-final with Cardiff before home games next weekend with Hull and Fife.
