Goals from James Forrest just before half time and Beram Kayal just after gave the Hoops a hard-earned lead at Parkhead on Tuesday evening.
But they were reduced to 10 men on 88 minutes when Nir Biton was shown a straight red card for an ugly challenge on Thulani Serero.
Ajax scored a late goal through Lasse Schöne but the Scottish champions held on to secure the three points as they notched up their first win of their European campaign.
It moves Celtic into third place ahead of Ajax in Group H, and gives them renewed hope of progressing after AC Milan and Barcelona drew 1-1 in their game.
"It leaves us in a very good position," said Lennon.
"We will have to get a result in Amsterdam and that is going to be very difficult on tonight's evidence but it is not beyond us. We have three points, just two points behind Milan so the group is open for us again. It was a massive win in the context of the group.
"Ajax at home are a formidable side. They keep the ball well and kept possession. But credit to players, this our 19th competitive game so far. The squad is stretched.
"It was a heroic effort and I thought we thoroughly deserved to win the game."
