The actress has been looking back at her time on the show, culminating in Thursday's shock scenes which saw Donna fall to her death, taking Gary North with her.
Her character had recently returned to the Dales to confess to former husband Marlon Dingle that, not only did they have a daughter, but that Donna herself was terminally ill.
However, her exit came sooner than expected after a planned heist went horribly wrong.
While admitting it has been "an emotional rollercoaster" filming her final scenes, Verity said: "I've loved every single minute of it - and I hope you've enjoyed it too."
Looking back at storylines like Donna's wedding to Marlon and her ill-fated brush with modelling, she added: "For me, filming these last scenes, it's been a really strange feeling because Emmerdale for me personally has been such a massive part of my life.
"From being 12 to 28, even though I had my gap, it's felt like coming home when I've come back here ... Now I've settled back in, I'll be really, really sad to leave and I'll miss everybody.
"But it's like closure and I'm really proud of what I've achieved."
Michael Parr, who plays bad-boy Ross Barton, also said working with Verity had been "an absolute dream" and that he will really miss her - especially how she bursts into song - while Verity said he had been "brilliant to work with, hunky to look at, and a real treat to get to know"!
