Phillips, who hosted the early morning show for 15 years before leaving in December 2008, will step in for a fortnight while Lorraine Kelly is away on a summer break.
Her stint begins on Monday morning.
"I've spent nearly a third of my life so far sitting on the GMTV sofa, so I'm really excited to be going back to see my old mates and the viewers again," she said.
Lorraine Kelly will return at the beginning of September for the launch of her new show, 'Lorraine'.
It is part of a shake-up of GMTV which will see the programme renamed Daybreak and fronted by new presenters Adrian Chiles and Christine Bleakley.
Also lined up for a guest stint before the show is revamped in September will be ex-Spice Girl Emma Bunton and Kirsty Gallacher.
Excited at the prospect of hosting GMTV, Gallagher said: "Filling in for the Queen of morning TV is a huge responsibility but I can't wait to get started."
Bunton, another former host of the programme, added: "It's great to be asked back again to Lorraine's sofa, I can't wait to see what we'll get up to this time and what fabulous guests are being lined up to join me."
