Colin - also known as the 'UK's Oyster King' - has won the championship eight times and currently holds the Guinness World Record for eating 233 oysters in just three minutes.
But the reigning champ is set to face huge competition in the form of two American giants from the 'competitive eating' world.
Pennsylvania -based Bob Shoudt, known to his fans as Notorious B.O.B., holds a number of world records in competitive eating, including devouring 39 Krystal hamburgers in two minutes.
The competitive eater is ranked 5th in the world by the IFOCE (International Federation of Competitive Eating).
Also hoping to steal the 'Oyster Crown' is Matt 'Megatoad' Stonie, from San Jose, California.
He is currently ranked 4th in the world and holds many records including eating 31 Slugburgers in ten minutes and 5.5lb of birthday cake in just under nine minutes.
Speaking about the upcoming contest, Stonie said he was delighted to be competing in "an incredible festival and very prestigious contest".
The World Oyster Eating Championship will take place on Saturday 7 September and will also feature competitors from Australia, New Zealand, Japan, Spain, South Africa, Lithuania, England, Scotland and Wales.
The 21st Hillsborough International Oyster Festival kicks off on Tuesday and runs until Sunday 8 September.
Organisers have predicted over 6,000 oysters will be enjoyed at what has become one of Europe's leading food festivals.
As well as the Oyster Eating Championship, other highlights include the Gourmet Food Market on Saturday 7 September.
Local seafood and Northern Irish produce will be on offer as well as cookery demonstrations by leading chefs such as Niall McKenna, Danny Millar, Derek Patterson and Andy Rae.
Also returning this year are popular family favourites including the Multi-Cultural Procession and Wacky Soapbox Race, while sporting highlights include the Super Car Sunday, Oysters Masters Golf and a Charity Cycle Ride.
