The 55-year-old, who was the first ever serving politician to appear on the reality show, left after the public vote on Wednesday.
"I kind of expected it," she told hosts Ant and Dec.
"But I'm not disappointed - I've been starving for two weeks!"
The contestants had the chance to save themselves after a series of Bush Buddy Challenges, with Ashley, Hugo, Rosemary, Limahl and Linda winning safety.
Nadine faced the vote alongside Colin, Charlie, Helen and David and Eric - who was also told it might be him.
Before leaving, the Mid-Bedfordshire MP said she would like to see David, Eric, or Helen - who she called a "very intelligent woman" - win the jungle crown.
Earlier, Hugo's reputation as the cleanliest member of camp went down the drain as he retrieved nine stars from the Savage Sewer in his first I'm A Celebrity trial.
The Made in Chelsea star had to crawl through a series of giant pipes filled with spiders, rats, toads and pythons to win meals for camp.
"Oh my God did he (the python) try and bite me?" he squealed.
But it was when water began to fill the pipe that Hugo - who "can't even go on the tube in London" due to his fear of confined spaces - really became rattled, and had to pass on the opportunity to pick up two stars.
"I'm so disappointed by the spiders one," he told Ant and Dec afterwards.
"You had to put your head under the water (to get into the pipe) and I was already freaked out when I saw the spiders."
Still, cleanly Hugo seemed pleased with his performance overall.
"I'm not going to lift a finger for the rest of the day," he said on his way back to camp. "I'm going to really, really abuse my success now to make sure I get the best out of my day."
He returned to a rapturous applause from his fellow celebrities, who would dine on a feast of ostrich eggs cooked by chef Rosemary.
Hugo branded it "the best thing ever cooked in the jungle".
