The Italian was named the winner after the gruelling three week competition.
Self-proclaimed Queen of Clean Kim Woodburn was runner-up and snooker ace Jimmy White came third.
D'Acampo told presenters Ant and Dec: "It feels great, I know that I'm going to get into some kind of civilisation very soon.
"These three weeks have been crazy, up and down. I don't think there's ever been a day when I've thought, 'what am I doing here, I should be at home doing something else' - I really enjoyed every bit of the experience."
He said that when he watched the show at home, he thought "it must be a trick".
"But no, you have to do everything here, big walk, spider in the mouth, tightrope, you really have to do everything - you come here and suffer."
Woodburn said: "I slummed it, dear, I had ants in my pants."
She added: "You're taken from all your creature comforts, which you all take for granted, and suddenly you are dropped into a hell hole."
The eating trials were "absolutely horrible", she said.
"If you think of it now, you could retch.
"But I did it, my love, you've got to take the stars back, we want the food."
White said: "I really got involved, and we all kept a nice group. The greatest thing for me was the group effort, we all became pals and helped each other out."
He said he had lost 22lbs in weight and added: "I learned a lot about myself and I'm absolutely delighted I've come here."
Trials
The last three finished off their stay in the camp with typically terrifying trials.
D'Acampo's fine palate was pushed to the limits after being forced to tackle a stomach churning menu of rotten egg, cockroaches and a crocodile's tongue.
He was forced to eat the foul fare plus rhino beetles, a witchetty grub and meal worms to win a slap-up dinner for his fellow campers.
He passed the gut-churning challenge with flying colours.
He said: "That was disgusting, you people are crazy. The worst was the egg."
There were further bug-infested trials for White, who was clamped in leg irons and handcuffs and locked in a flooded chamber.
With water spiders and other creepy-crawlies sent to keep him company, Jimmy kept his cool and found the keys to unlock himself and won three desserts for the final meal in camp.
Woodburn barely flinched in her challenge to win a trio of starters for dinner.
She even found time to flirt with Ant and Dec as thousands of ants, grasshoppers and critters were poured over her body.
After the challenge Kim said: "I'm delighted, I didn't want to fail anything, and I've got a cockroach on my nipple."
Ant quipped: "Lucky fella."
But sidling up to his co-presenter she said: "Come on darling, you little honey, I think you are very attractive. I'll be in the caravan later - prepared! You are thinking about that aren't you?"
In its three week run I'm A Celebrity... has attracted an average audience of 8.4 million viewers, the highest average since the 2005 series which was won by Carol Thatcher.
