The Olympic gymnast was crowned winner of Dancing on Ice in a surprising public vote on Sunday.
Speaking on This Morning, Beth said she was looking forward to some down time.
"Since the Olympics I literally went straight into training for Dancing on Ice so it is going to be very strange to just go home and spend some time with family and friends," she said.
In the final Beth performed a number of spectacular routines with partner Dan Whiston, including the iconic Bolero.
Judge Robin Cousins described Beth's rendition as "electric", while former Pussycat Doll Ashley Roberts said: "That was sexy. That was sultry. There was attack. There was softness."
Despite the high praise Beth was a surprise champion for this year's competition.
Runner up Matt Lapinskas was a favourite throughout the series and was the only contestant to receive full marks for his routines in the final.
Jason Gardiner told him: "You are the reason I love the final. You've got the whole package and you bring it and you smashed it!"
Jason then told him after his version of the Bolero: "For me, you are my champion."
However Beth said she was 'amazed' at being crowned the winner.
"I'm still overwhelmed by it all I've had the most amazing experience and obviously Dan helped a lot with that. It's just been brilliant.
"I loved every single minute of it. Even though most of the time I spent falling over and Dan would laugh at me," she added.
